Amish Melting Cheese

Ingredients:

  • 1 gallon milk (raw or pasteurized)

  • 2 tbsp citric acid

  • 3 tbsp melted butter

  • 1/2 tsp salt

  • 1 tsp baking soda

  • 3 tbsp cheddar cheese powder (exactly one mac and cheese packet)

Instructions:

  1. Heat milk to 140 degrees Farenheit, stirring to avoid scalding.

  2. Once reached, take off heat and sprinkle citric acid. Let is sit still for one minute before stirring into milk. Keep stirring until curd separates from whey.

  3. Stop stirring, cover pot and let sit for 10 minutes.

  4. Place large pan in sink and colander in sink; straining the curds from whey--letting the pan collet the whey.

  5. Repeat until curds and whey are separated.

  6. Add remaining ingredients and return to stove.

  7. Cook mixture on low whilst stirring, about 5-10 minutes, until melted and smooth.
