Baked Oatmeal

Ingredients:

  • 3 cups rolled oats

  • 3/4 cup brown sugar (or maple syrup or coconut sugar)

  • 1 & 1/2 tsp baking powder

  • 1 tsp ground cinnamon

  • 1/2 tsp salt

  • 2 eggs, beaten

  • 2 & 1/2 cups milk

  • 1 tsp vanilla extract

  • 4 tbsp butter or coconut oil, melted

  • 2 cups fresh berries or other chopped fruit (I used apples)

Instructions:

  1. Preheat oven to 350ºF and butter an 8x8 baking dish.

  2. Combine all ingredients, stirring fruit in at the end. Pour mixture into baking dish.

  3. Gently shake the baking dish back and forth to allow the wet mixture to get down into the oats.

  4. Bake uncovered for about 35 minutes until oats are tender and mixture is set. Serve immediately with cream. Also good served warm or chilled!

    Note: for my Weston A Price diet girlies we have tried doing this with oats that have been soaked overnight! Just make sure you drain off the water really well and cut back about a 1/2 cup of the milk. It may also take a tiny bit longer to bake if I'm remembering correctly.
